Hi,
The roof of my mouth slightly near the middle I have a few red/blood looking spots. I’ve only just noticed them today. The roof of my mouth has been itchy all day and only seems to of just occurred. One of the veins at the back of my throat is also looking really dark purple.

They look like nothing unless you had some sort of oral sex, otherwise you can just ignore it or take an antihistaminic

It looks like allergic reaction..
As your roof of mouth was itchy and purple veins in throat, it is probably allergy..
You can take anti allergic like benadryl and do warm saline gargles..
